Chocolate Chip Cookies


Makes approximately 16

  • 150g soft unsalted butter
  • 130g caster sugar
  • 100g soft light brown sugar
  • 2 tsp vanilla paste or extract
  • 1 egg
  • 1 egg yolk
  • 300g plain flour
  • ½ tsp bicarbonate of soda
  • pinch of salt
  • 300g of chocolate chips or a bar of chocolate cut into small chunks


  1. Preheat oven to 175  ͦ C
  2. Place butter and sugars together  in a bowl and beat until well combined (making sure the butter is very soft)
  3. Beat in the vanilla and eggs until light and creamy
  4. Sieve the flour and bicarb into the bowl and slowly mix in until just blended, add your chocolate and gently fold through the dough
  5. Let the cookie dough cool in the fridge for 10 minutes
  6. Using a spoon or ice cream scoop put golf ball size pieces of cookie dough onto a lined baking tray leaving a 3 inch gap between them
  7. Bake for 12- 15 minutes or until the edges are a little crisp
  8. Cool on the tray for 5 minutes before transferring to a wired rack



  •        Keep the cookie dough refrigerated between cooking batches
  •       You can shape this dough into a sausage and freeze cutting off as much or as little as you want each time you bake
