Gooey Salted Caramel Brownies


  • 12 tbsp Salted caramel
  • 225g Butter
  • 400g Dark chocolate
  • 4 Eggs
  • 300g Caster sugar
  • 1tsp Sea salt
  • 300g Plain flour


  1. Line a baking tray (or a dish that will fit in your freezer) with baking parchment.
  2. Dollop 12 tbsp of salted caramel onto the dish and freeze for 1 hour before making your brownie batter
  3. Pre-heat oven to 170 ͦ c
  4. Grease and line a 9 x 13” tin with baking parchment
  5. Melt the butter and add the dark  chocolate to the warm butter to melt through
  6. Whisk eggs,sugar and vanilla extract together in a separate bowl
  7. Slowly add your egg mixture to the chocolate whilst mixing
  8. Sieve and fold in the flour
  9. Fold through white chocolate
  10. Spread evenly into a lined and greased tin
  11. Push the frozen salted caramel balls into the batter for an even distribution of caramel throughout the brownie
  12. Bake in the middle of the oven for 25 minutes
  13. Let cool for 1 hour before cutting as this is a very gooey brownie after being cooled!
