Lamb Kebabs

Makes 6 kebabs


300g diced lamb

Olive oil

4 bay leaves

3 cloves garlic

Handful of rosemary

Handful of thyme

1 tbsp Fennel seeds

2 tbsp Oregano

1 red onion 

2 peppers 

Juice of 1 lemon






1. Preheat your oven to 180°C

2. Put all the herbs into a pestle and mortar with one tsp of oil and mash them up into a paste.

3. Put 4 tbsp of olive oil into a mixing bowl with the salt, pepper and the lemon juice then add all the herbs from the pestle and mortar. Add the diced lamb, onions and peppers to the bowl and mix. (The longer you leave the lamb in the marinade the better it will taste. Leave overnight if possible but up to one hour will be fine if you need to eat them that day.)

4. Make up your skewers with the lamb, onions and peppers. You should get 6 skewers. Lay the skewers on a baking tray and roast in the hot oven for about 10 to 15 minutes, or until charred, sticky and cooked through, turning occasionally.

5. Serve up with flatbreads, mint yoghurt, red cabbage and mixed salad.

This is an easy one to prepare and perfect if you need to get on with things throughout the day but need to feed a family later on. No harm in putting a plate of chips out as well :D
