Victoria sponge

When the weather is all doom and gloom it's a perfect time to bake a cake

 Cooking temperature 180°C


225 g unsalted butter/margarine 

225 g caster sugar

4 eggs

1 tsp vanilla extract

225 g self-raising flour 

2 tsp baking powder


  1. Grease and line two 8" cake tins 
  2. Place racks in the middle of the oven and preheat to 180°C
  3. Butter and sugar together for 3 minutes until light and fluffy then slowly add the eggs and vanilla until incorporated, then sieve in the flour and
  4. You should have a cake batter that just drops off the spoon if too dry add a splash of milk 
  5. Split the mixture into the tins
  6. Bake for 25 - 30 minutes
  7. Remove from the oven and cool completely on a wire rack
  8. Now fill with your favourite cream and jam
